Vanilla Oats with Coconut Chia Pudding

Ingredients

Vanilla oats

  • 5 tbsp oats
  • 2 tbsp oat flour
  • 1 cup oat-milk
  • 1/2 cup water
  • 1 tbsp vanilla essence
  • 1 tbsp flaxseeds
  • Pinch of cinnamon and salt
  • 5 cardamoms

Coconut chia pudding

  • 1 cup coconut milk (fat cream)
  • 2 tbsp chia seeds
  • 1/2 cup water

Preparation

  1. In a hot pan, grill oats and oat flour a bit.

  2. Add water, stir then add the rest of ingredients with oat milk at the end for the vanilla oats mixture.

  3. Transfer the mixture to a bowl.

  4. Mix chia seeds with water and stir until you get a thick texture for the coconut chia pudding.

  5. Add coconut milk to the pudding mixture.

Serving suggestions

  1. Serve the chia pudding on top of the vanilla oats with nuts, fruits, peanut butter, and dark chocolate.
