Vegan Chia Pudding with Cacao and Toppings

Ingredients

  • 1/8 cup cacao powder
  • 1/4 cup rice malt syrup
  • 2 tsp ground cinnamon (optional)
  • 2 tsp vanilla extract
  • 1 1/2 cups coco quench (or soy, oat, rice, coconut)
  • 1/2 cup chia seeds

Optional toppings

  • 1/2 cup coconut yoghurt
  • cacao nibs
  • coconut flakes

Preparation

  1. Mix the ingredients together in a bowl, ensuring no lumps of cacao are present.

  2. Pour the mixture into two small jars or glasses.

  3. Cover and place in the fridge to set for at least a couple of hours or overnight.

  4. Once set, add desired toppings such as coconut yoghurt, cacao nibs, coconut flakes, or fresh fruit.

  5. Feel free to get creative with your toppings.
