Preparation
Roast the Kobocha Squash until tender and caramelized
Roast the chickpeas until crispy
Fry the plantains until golden brown
Prepare an avocado rose by slicing and arranging the avocado
Assemble the bowl by placing spinach as the base
Add the roasted squash, roasted chickpeas, vegan feta crumbles, and cucumbers
Top with the avocado rose
