Vegan Peaches and Cream Pancakes
Ingredients
- 1.5 cups sprouted rolled oats
- 1.5 cups almond milk
- 2 tablespoons coconut sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoon vanilla
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- sprinkle of salt
- olive oil for cooking
- ripe peaches for serving
- maple syrup for serving
- dairy-free coconut whip for serving
Preparation
Blend 1.5 cups sprouted rolled oats, 1.5 cups almond milk, 2 tablespoons coconut sugar, 1 tablespoon apple cider vinegar, 1 teaspoon vanilla, 2 teaspoons baking powder, 1 teaspoon baking soda, and a sprinkle of salt.
Cook the batter in olive oil for 2 minutes per side.
Serve with ripe peaches, maple syrup, and dairy-free coconut whip.
