Vegan Peaches and Cream Pancakes

Ingredients

  • 1.5 cups sprouted rolled oats
  • 1.5 cups almond milk
  • 2 tablespoons coconut sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • sprinkle of salt
  • olive oil for cooking
  • ripe peaches for serving
  • maple syrup for serving
  • dairy-free coconut whip for serving

Preparation

  1. Blend 1.5 cups sprouted rolled oats, 1.5 cups almond milk, 2 tablespoons coconut sugar, 1 tablespoon apple cider vinegar, 1 teaspoon vanilla, 2 teaspoons baking powder, 1 teaspoon baking soda, and a sprinkle of salt.

  2. Cook the batter in olive oil for 2 minutes per side.

  3. Serve with ripe peaches, maple syrup, and dairy-free coconut whip.
