Vegan Pumpkin Tiramisu Dessert
Ingredients
- 150g soaked cashews
- 100g pumpkin purée
- 100-150g vegan yogurt or coconut milk
- 3 tablespoons maple syrup
- 2 tablespoons brown sugar
- 2 teaspoons vanilla extract or paste
- 1/2 teaspoon ground cardamom
- spices of your choice
- pinch of salt or 1 teaspoon miso
Assembly components
- lady fingers
- strong coffee
- cocoa powder
Preparation
Blend all mascarpone ingredients together.
Dip each lady finger cookie into the coffee and line a dish with one layer of cookies.
Add a smooth layer of mascarpone mixture and repeat the process until all ingredients are used.
Chill the tiramisu and top with sifted cocoa powder and shaved dark chocolate.
