Vegan Pumpkin Tiramisu Dessert

Ingredients

  • 150g soaked cashews
  • 100g pumpkin purée
  • 100-150g vegan yogurt or coconut milk
  • 3 tablespoons maple syrup
  • 2 tablespoons brown sugar
  • 2 teaspoons vanilla extract or paste
  • 1/2 teaspoon ground cardamom
  • spices of your choice
  • pinch of salt or 1 teaspoon miso

Assembly components

  • lady fingers
  • strong coffee
  • cocoa powder

Preparation

  1. Blend all mascarpone ingredients together.

  2. Dip each lady finger cookie into the coffee and line a dish with one layer of cookies.

  3. Add a smooth layer of mascarpone mixture and repeat the process until all ingredients are used.

  4. Chill the tiramisu and top with sifted cocoa powder and shaved dark chocolate.
