Vegan Version of Rustic Apple Pie

Ingredients

  • 1 1/2 sheets vegan puff pastry
  • 4 medium apples, peeled and diced
  • 1 teaspoon cinnamon
  • 2 teaspoons vanilla essence
  • 1/2 apple, sliced thinly
  • 3 tablespoons maple syrup
  • 1/2 cup raisins
  • 1/3 cup water

Preparation

  1. In a pot, add the diced apples, cinnamon, raisins, maple syrup, and water, and cook on medium heat, adding more water as needed until the apples are soft, then set aside to cool.

  2. Line a medium rectangular oven dish with the puff pastry, ensuring it covers all areas, and bake at 180°C for 20 minutes.

  3. Once the pastry is baked, add the cooked apple mixture, place the thinly sliced apples on top, and bake for an additional 20 minutes.
