  • Juice from half a lemon
  • Water
  • 3 Tbsp apricot jelly
  • 1 tsp water
  • Cinnamon
  • Coconut sugar
  • Pastry dough

Preparation

  1. Preheat oven to 375 degrees

  2. Clean apples, core and cut in half straight down the middle from stem down

  3. Place cut side down, cut thin slices from base of apple to top

  4. Squeeze half of lemon into bowl

  5. Add water filling half way, stir

  6. Place apple slices in water to just covered

  7. Microwave apples for 3 minutes, until softened but not mushy

  8. Roll pastry dough out to 12 inches in length, 3 inches in width

  9. Place apricot jelly and water in small bowl and microwave for 1 minute

  10. Spread jelly mixture over pastry strips

  11. Sprinkle with cinnamon

  12. Sprinkle with coconut sugar

  13. Place apple at one end of pastry strip with apple skin on outside about half way over the edge. Continue to lay apple slices across the full length of the strip slightly overlapping each apple

  14. Fold dough over the apples so you can see only the part over the edge of the dough

  15. Loosely roll, you will see your rose appear

  16. Spray coconut oil in muffin tin, add some coconut sugar to coat

  17. Place rose apple into muffin tin

  18. Bake for 40 minutes, until golden
