Easy Vegan Apple Galette

Ingredients

Pastry

  • 2 cups flour
  • 1 1/2 tablespoons coconut sugar
  • 1/2 teaspoon salt
  • 1/2 cup, plus 2 tablespoons vegan butter
  • 2 tablespoons vegetable oil
  • 3 tablespoons water (cold)

Filling

  • 2 Honey Crisp apples, peeled, cored, sliced
  • 4 tablespoons apricot preserves
  • 1 1/2 tablespoons coconut sugar
  • 1/2 teaspoon cinnamon
  • rind from 1 lemon
  • 1 tablespoon water

Preparation

  1. Combine all ingredients except for the apricot preserves and reserve that for spreading on the pastry before layering the apples.

  2. Combine the flour, sugar, and salt in a large bowl.

  3. Cut in the vegan butter, mixing until crumbly.

  4. In a separate bowl, whisk together the vegetable oil and water.

  5. Add the oil and water mixture to the flour and sugar mixture, mixing just until dough forms and use hands to ensure all flour is incorporated.

  6. Once the dough pulls together, cover with plastic wrap and chill in the refrigerator for at least 30 minutes.

  7. After 30 minutes, remove the dough from the refrigerator and roll out onto a lightly floured surface to about 1/4-inch thickness.

  8. Spread apricot preserves on the dough.

  9. Layer apples in a circle form starting from 1.5 inches from the outer edge working towards the center.

  10. Fold edges of pastry over the apples.

  11. Preheat oven to 350 degrees Fahrenheit

  12. Bake in a 350-degree oven for 30-40 minutes or until golden brown.
