Asian Cauliflower Zucchini Fritters

Ingredients

  • 1 grated cauliflower
  • 2 grated zucchini
  • 2 finely chopped scallions
  • 1 tablespoon grated ginger
  • 1 tablespoon xylitol or sugar
  • 1 heaped tablespoon peanut butter
  • 1/2 tablespoon Chinese 5 spice
  • 1 tablespoon sambar masala
  • 1/2 tablespoon curry powder
  • 1/2 tablespoon smoked paprika
  • 1 tablespoon soya sauce
  • 1 tablespoon psyllium husk powder at a time up to 3 tablespoons
  • 2 teaspoons salt
  • Coconut oil to shallow fry

Preparation

  1. Mix the cauliflower and zucchini together in a bowl and add 2 teaspoons of salt. Let the mixture sit for a few minutes then tie in a cheese cloth and squeeze all the water out

  2. Transfer to a bowl and mix in remaining ingredients. Mix in psyllium husk powder half a tablespoon at a time till the mixture just binds

  3. Shape into fritters and shallow fry in coconut oil or brush with coconut oil and bake till done
