Asian-Inspired Quinoa Salad with Avocado Dressing
Ingredients
- quinoa
- edamame
- cucumber
- red bell pepper
- spinach
Dressing components
- 1/2 avocado
- 2 tsp apple cider vinegar
- 1 tbsp sesame oil
- 2 tsp grated ginger
- 2 tsp garlic powder
- 1/2 lime
- salt and pepper
Preparation
Mash the avocado, add apple cider vinegar, sesame oil, grated ginger, garlic powder, lime juice, salt, and pepper, and mix well.
Cook quinoa according to package instructions
Prepare edamame if frozen or raw, by thawing or cooking as needed
Chop cucumber and red bell pepper into bite-sized pieces
Assemble the salad by placing spinach as a base, adding cooked quinoa, edamame, chopped cucumber, and bell pepper, then drizzle with the dressing
