Blueberry Baked Oatmeal

Ingredients

  • 2 cups / 500 ml almond milk⁣
  • 1 large banana, mashed⁣
  • 1 large apple, grated⁣
  • 2 flax eggs (2 tbsp flax meal mixed with 5 tbsp water)⁣
  • 2 cups / 180g rolled oats⁣
  • 3/4 cup / 90g almond flour⁣
  • 2 tsp baking powder⁣
  • 1/4 tsp vanilla⁣
  • pinch of salt⁣
  • 1 cup / 100g blueberries⁣

Preparation

  1. Preheat your oven to 175C or 350F

  2. Make your flax eggs and let it set for 5min

  3. Mix all wet ingredients (almond milk, banana, grated apple, flax eggs)

  4. Then add the other ingredients

  5. Mix well and fold in the blueberries last

  6. Pour into a baking dish and bake for 30-35min

  7. Let it cool slightly for about 15 minutes

  8. Serve with fruits & some plant yoghurt or vegan whipped cream

  9. It keeps well in the fridge for 4-5 days
