Breakfast for Lunch
Ingredients
- waffles:
- 2 eggs
- 1/4 cup coconut flour
- 1 tbsp applesauce
- 1 tsp baking powder
Preparation
Whisk the eggs then add in the bananas
Mash the bananas
Then add in the flour, applesauce, and baking powder
Made these in a mini waffle maker
Cook for 5 minutes
Makes 4 mini waffles. I added blueberries to one! Haven’t tested yet in a regular waffle maker but I would assume they’d work with more cooking time
Paired with mashed avocado, peanut butter, and 2 fried eggs
