Breakfast for Lunch

Ingredients

  • waffles:
  • 2 eggs
  • 1/4 cup coconut flour
  • 1 tbsp applesauce
  • 1 tsp baking powder

Preparation

  1. Whisk the eggs then add in the bananas

  2. Mash the bananas

  3. Then add in the flour, applesauce, and baking powder

  4. Made these in a mini waffle maker

  5. Cook for 5 minutes

  6. Makes 4 mini waffles. I added blueberries to one! Haven’t tested yet in a regular waffle maker but I would assume they’d work with more cooking time

  7. Paired with mashed avocado, peanut butter, and 2 fried eggs
