Caramel Coconut Bliss Balls

Ingredients

  • 1 cup pitted Medjool dates (packed)
  • 1 cup almonds (I use blanched sliced almonds)
  • 1/4 cup unsweetened shredded coconut (+extra for rolling)
  • 1/4 tsp salt

Preparation

  1. Blend the dates and almonds until a sticky mixture forms

  2. Add the shredded coconut and salt, then mix thoroughly

  3. Form the mixture into small balls using your hands

  4. Roll the balls in the extra shredded coconut to coat
