Carrot Cake with Chocolate Frosting

Ingredients

  • 4 eggs
  • 3 carrots, chopped
  • 1 cup vegetable oil
  • 2 cups sugar
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • Margarine and all-purpose flour for greasing the pan

Frosting

  • 2 (14-ounce) cans sweetened condensed milk
  • 2 tablespoons unsalted margarine
  • 1 cup cocoa powder
  • 1/2 can (150g) heavy cream

Preparation

  1. In a blender, blend the eggs, carrots, vegetable oil, and sugar on medium speed

  2. Transfer to a bowl, add the flour and baking powder, and mix with a spoon

  3. Pour the batter into a small greased and floured pan

  4. Bake in a preheated medium oven for 30 minutes or until a toothpick inserted in the center comes out clean

Frosting

  1. In a saucepan, combine the sweetened condensed milk, unsalted margarine, and cocoa powder

  2. Cook over medium heat, stirring until the mixture begins to pull away from the bottom of the pan

  3. Remove from heat and stir in the heavy cream until smooth

  4. Remove the cake from the oven and spread the frosting over it

  5. Let the cake cool and serve
