Chewy Choc Chip Tahini Cookies

Ingredients

  • 1.5 tbsp flax seed meal
  • 1/4 cup water
  • 3/4 cup tahini
  • 3 tbsp light brown sugar
  • 4 tbsp maple syrup
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 70g good quality 50% chocolate (vegan obv)
  • 3-4 tbsp almond flour

Preparation

  1. Mix flax seed meal and water and set aside for 2 mins to make the flax “egg

  2. Add tahini to a bowl

  3. Add in the flax egg, all the rest of the ingredients and 3 tbsp of the almond flour (reserve the last tbsp)

  4. Stick the mixture in the fridge to cool for 30 mins

  5. Depending on the brand of tahini, you might need to add 1/2 to 1 tbsp more almond flour

  6. The mixture will be sticky, but should be able to keep its shape on scooping

  7. Line a baking sheet with parchment

  8. Preheat the oven to 170c

  9. Use a scoop or spoon dip the scoop in water, shake excess off, then scoop the tahini mixture and place on the sheet

  10. Repeat for all of the dough

  11. Bake for 11 mins

  12. Then remove the baking sheet

  13. Press down on the cookies using a spoon and bake for another 4 mins

  14. Let cool completely on the sheet
