Chocolate Orange Pancakes

Ingredients

  • 1 cup orange juice
  • 1 banana
  • 1/2 cup oats⁠
  • 1/2 cup gluten-free all purpose flour⁠
  • 1 tsp baking powder⁠
  • 1/2 tbsp unsweetened cocoa powder⁠
  • pinch salt⁠
  • 1 tbsp maple syrup⁠
  • fresh orange slices⁠
  • vegan chocolate chips⁠
  • extra maple syrup⁠

Preparation

  1. Place all ingredients in your blender/food processor and blend until smooth

  2. Heat a large skillet over low heat, spray with non-stick coconut oil spray and pour 1 tbsp of batter per pancake

  3. Cook a couple minutes per side

  4. Top with fresh oranges, chocolate chips, and drizzled maple syrup
