Coconut Cardamom Pancakes

Ingredients

  • coconut cardamom pancakes
  • 1 mashed ripe banana
  • 1 tbsp maple syrup
  • 1 tsp cinnamon
  • 1/4 tsp cardamom
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/4 cup canned lite coconut milk
  • 3 tbsp coconut flakes
  • 1 tbsp white vinegar
  • 1 cup white whole wheat flour ?

Preparation

  1. In a medium mixing bowl, add all ingredients except flour and whisk together to evenly mix

  2. Add in flour, and whisk into the wet ingredients, but avoid over mixing

  3. On a preheated griddle or pan (I use a non-stick surface so don’t use oil, but feel free to grease your surface if your cookware tends to stick), ladle 1/4 cup of batter onto cooking surface and spread out as desired

  4. Allow to cook for about 3-4 minutes or once underside is golden (batter should bubble and the edges will appear to be drying), then flip and cook other side for about 2-3 minutes or until fully cooked

  5. Continue this process until all pancakes are cooked

  6. Makes 8 pancakes
