Coconut Cardamom Pancakes
Ingredients

- 1 mashed ripe banana
- 1 tbsp maple syrup
- 1 tsp cinnamon
- 1/4 tsp cardamom
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/4 cup canned lite coconut milk
- 3 tbsp coconut flakes
- 1 tbsp white vinegar
- 1 cup white whole wheat flour ?
Preparation
In a medium mixing bowl, add all ingredients except flour and whisk together to evenly mix
Add in flour, and whisk into the wet ingredients, but avoid over mixing
On a preheated griddle or pan (I use a non-stick surface so don’t use oil, but feel free to grease your surface if your cookware tends to stick), ladle 1/4 cup of batter onto cooking surface and spread out as desired
Allow to cook for about 3-4 minutes or once underside is golden (batter should bubble and the edges will appear to be drying), then flip and cook other side for about 2-3 minutes or until fully cooked
Continue this process until all pancakes are cooked
Makes 8 pancakes
