Creamy Avocado Pasta
Ingredients
- two tablespoons of cooked chickpeas
- one tablespoon of evoo
- a tablespoon of white wine
- one tablespoon of dried basil
- a pinch of water, salt and pepper to taste
Preparation
Cook the amount of pasta necessary for three people. In a processor add all the ingredients at once. Mix and season with salt and pepper
When the pasta is cooked set aside and reserve a quarter glass of the cooking water. Drain the pasta and put it back in the saucepan. Add the sauce and half of the reserved cooking water. Mix until it is incorporated well (add the water little by little to get the proper texture)
To finish cut some cherry tomatoes (6 per head) and mix them. Serve with a pinch of pepper and basil on top
