Curried Chickpea Sandwich
Ingredients
- 2 cans chickpeas, rinsed and drained
- 1/2 c mayonnaise
- 1 c celery, small dice
- 1/2 c red onion, small dice
- 1/2 lemon, juiced
- 1/2 c pecans
- 1/3 c dried cranberries
- 1 1/2 tsp ground mustard
- 1 tbsp madras curry powder
- 1 tsp turmeric
- 1/2 tsp salt
- 1/4 tsp cracked black pepper
Preparation
In a large bowl add the rinsed and drained chickpeas and the mayonnaise
Use a potato masher or a fork to mash the chickpeas
Mash the chickpeas so that some of the chickpeas are left whole, but most of them are mashed
Add the remaining ingredients and stir until everything is fully combined
