Delicious Vegan Strawberry and Cherry Pancakes
Ingredients
- 300ml soya milk
- 1/2 tablespoon apple cider vinegar
- 200g self-raising flour
- 2 tablespoons caster sugar
- 1 teaspoon vanilla extract
- 100g frozen berries, defrosted
Preparation
Mix the soya milk and apple cider vinegar together.
Add the caster sugar and vanilla to the soya milk mixture.
If you have any large berries, squash them slightly to break them up.
Measure the flour into a large bowl and add the berries, followed by the milk mixture a little at a time until you have a smooth batter.
Cook the batter on a lightly oiled frying pan or hot plate until lightly browned, then flip over and cook on the other side.
