Dill Pickle Macaroni Salad

Ingredients

  • 1 lb (453g) Macaroni Pasta (you can use any short pasta shape)
  • 3-4 Bubbies Dill Pickles, chopped
  • 1/3 cup (45g) Red Onion, finely chopped
  • 1/3 cup (78ml) Vegan Mayo
  • 1/3 cup (78ml) Vegan Sour Cream
  • 3 tsp (15ml) Dijon Mustard
  • 1/2 tsp (2.5 g) Celery Seed
  • 2 1/2 Tbsp (37.5 g) Dill, chopped
  • 1/4 cup (59 ml) Bubbies Pickle Juice
  • Salt & Pepper, to taste

Preparation

  1. Cook the Pasta according to package directions. Drain well and set aside.

  2. Add the chopped Pickles and Red Onion to a large bowl. Add in the cooked Pasta and mix well.

  3. Mix together the Vegan Mayo, Vegan Sour Cream, Pickle Juice, Mustard, Celery Seed, and chopped Dill. Add the mixture to the Pasta and mix thoroughly.

  4. Season with Salt & Pepper to taste and either serve chilled or at room temperature.
