Dreamy Chocolate Avocado Mousse

Ingredients

  • 2 medium sized ripe avocados
  • 6 tbsp Dutch processed cocoa powder (you can use raw cacao but I prefer the flavor of the cocoa)
  • 1.5 tsp vanilla extract
  • 1/4 cup nut butter of choice (I’ve used peanut
  • almond and cashew successfully)
  • 4-6 tablespoons monkfruit or coconut sugar or maple syrup (the latter will make the consistency a little thinner but not much)
  • 1/4 tsp cinnamon and a pinch of salt
  • cacao nibs and / fresh berries

Preparation

  1. In a food processor, combine 2 medium sized ripe avocados, 6 tbsp Dutch processed cocoa powder (you can use raw cacao but I prefer the flavor of the cocoa), 1

  2. Tsp vanilla extract, 1/4 cup nut butter of choice (I’ve used peanut, almond and cashew successfully), 4-6 tablespoons monkfruit or coconut sugar or maple syrup (the latter will make the consistency a little thinner but not much), 1/4 tsp cinnamon and a pinch of salt

  3. Blend until smooth and creamy— no Avo chunks! I let it go for a at least a few mins, scraping down the sides several times

  4. Refrigerate mousse for at least 2 hours before enjoying

  5. I love it topped with cacao nibs and / fresh berries
