Dreamy Chocolate Avocado Mousse
Ingredients
- 2 medium sized ripe avocados
- 6 tbsp Dutch processed cocoa powder (you can use raw cacao but I prefer the flavor of the cocoa)
- 1.5 tsp vanilla extract
- 1/4 cup nut butter of choice (I’ve used peanut
- almond and cashew successfully)
- 4-6 tablespoons monkfruit or coconut sugar or maple syrup (the latter will make the consistency a little thinner but not much)
- 1/4 tsp cinnamon and a pinch of salt
- cacao nibs and / fresh berries
Preparation
In a food processor, combine 2 medium sized ripe avocados, 6 tbsp Dutch processed cocoa powder (you can use raw cacao but I prefer the flavor of the cocoa), 1
Tsp vanilla extract, 1/4 cup nut butter of choice (I’ve used peanut, almond and cashew successfully), 4-6 tablespoons monkfruit or coconut sugar or maple syrup (the latter will make the consistency a little thinner but not much), 1/4 tsp cinnamon and a pinch of salt
Blend until smooth and creamy— no Avo chunks! I let it go for a at least a few mins, scraping down the sides several times
Refrigerate mousse for at least 2 hours before enjoying
I love it topped with cacao nibs and / fresh berries
