Easy Cashew Nut and Cardamom Biscuits

Ingredients

  • 150g butter
  • 150g caster sugar
  • 200g cashew nuts, finely ground
  • 150g plain flour
  • 1 large egg
  • Ground seeds from 2 cardamom pods or 8 drops of cardamom extract

Preparation

  1. Cream together the butter and sugar

  2. Add the egg and mix well

  3. Add the flour and ground cashew nuts and mix to form a dough

  4. Roll the dough into approximately 0.5cm thickness and cut desired shapes using cutters

  5. Re-roll the edges and repeat

  6. Bake in the oven at 160°C (fan) for about 10-12 minutes until just turning golden, keep a close eye after 5 minutes as time depends on thickness

  7. Cool and enjoy

Tips

  1. For a nut-free version, swap the cashew nuts for more plain flour or keep them for added protein and good fats
