Easy Coconut Cake with Creamy Syrup

Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 100 grams shredded coconut
  • 3 eggs
  • 1 cup milk
  • 1/2 cup oil
  • 1 tablespoon baking powder
  • 1 package moist shredded coconut, for sprinkling
  • Margarine, for greasing
  • Flour, for greasing

Syrup

  • 200 ml coconut milk
  • 1 tablespoon sugar
  • 1 tablespoon cornstarch

Preparation

  1. Blend milk, oil, sugar, and eggs in a blender for 2 minutes

  2. Add flour, shredded coconut, and baking powder; blend for 1 minute until combined

  3. Pour batter into a greased and floured baking pan

  4. Bake at 200Β°C for 35 minutes until golden on top

Syrup

  1. Combine coconut milk, sugar, and cornstarch in a saucepan over low heat

  2. Stir constantly until mixture boils and thickens slightly

Finishing

  1. Pour warm syrup over hot cake

  2. Sprinkle with moist shredded coconut

  3. Serve
