Easy Coconut Cake with Creamy Syrup
Ingredients
- 2 cups all-purpose flour
- 2 cups sugar
- 100 grams shredded coconut
- 3 eggs
- 1 cup milk
- 1/2 cup oil
- 1 tablespoon baking powder
- 1 package moist shredded coconut, for sprinkling
- Margarine, for greasing
- Flour, for greasing
Syrup
- 200 ml coconut milk
- 1 tablespoon sugar
- 1 tablespoon cornstarch
Preparation
Blend milk, oil, sugar, and eggs in a blender for 2 minutes
Add flour, shredded coconut, and baking powder; blend for 1 minute until combined
Pour batter into a greased and floured baking pan
Bake at 200Β°C for 35 minutes until golden on top
Syrup
Combine coconut milk, sugar, and cornstarch in a saucepan over low heat
Stir constantly until mixture boils and thickens slightly
Finishing
Pour warm syrup over hot cake
Sprinkle with moist shredded coconut
Serve
