Easy Oatmeal and Banana Cookies
Ingredients
- 2 ripe bananas, mashed
- 120g peanut butter
- 60ml maple syrup or agave syrup
- 1 tsp vanilla extract
- 180g rolled oats
- 60g all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp cardamom
- 1/4 tsp salt
- 80g chocolate chips
- 60g chopped nuts (such as walnuts, pecans and almonds)
Preparation
Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the mashed bananas, peanut butter, syrup and vanilla extract. Stir well until smooth and creamy.
In a separate bowl, whisk together the rolled oats, flour, baking powder, ground cinnamon, and salt.
Add the dry ingredients to the wet ingredients and mix until well combined. The dough will be sticky.
Fold in the chocolate chips and chopped nuts, ensuring they are evenly distributed throughout the dough.
Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 5 centimeters apart. Use the back of a spoon to slightly flatten each cookie.
Bake in the preheated oven for 12 to 15 minutes or until the cookies are lightly golden brown around the edges.
Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes. Then transfer them to a wire rack to cool completely.
Once the cookies are completely cooled, store them in an airtight container at room temperature.
