Oatmeal Banana Cookies with Chocolate and Spices
Ingredients
- 280g rolled oats
- 2 large ripe bananas
- 4 heaped tablespoons peanut butter
- 2 teaspoons chia seeds
- 2 tablespoons coconut shreds
- Optional: Stevia or other sweetener
- 2 teaspoons cinnamon
- 1/2 teaspoon cardamom
- 2 handfuls chocolate chips
- Optional: Walnuts or other nuts or dried fruit
Preparation
In a bowl, add oats, chia seeds, stevia, coconut shreds, nuts or dried fruit, cinnamon, and cardamom. Mix until combined.
Mash the bananas and add to the dry ingredients along with peanut butter. Mix until combined. Add chocolate chips.
Preheat oven to 180°C.
Form the mixture into 10-12 cookies.
Bake in the oven for 10-12 minutes. Allow to cool slightly before eating. Freeze uneaten cookies within 48 hours.
Note: Chocolate chips are necessary and not optional. Cookies work great to freeze and reheat for meal prep.
