Soft and Crispy Banana Oatmeal Pancakes

Ingredients

  • 100g rolled oats
  • 1 tsp baking powder
  • 60g Graham flour or all-purpose flour
  • 1.5 tbsp flaxseeds
  • 1 tsp cinnamon
  • 1/4 tsp cardamom
  • 2 large ripe bananas
  • 250 ml soy milk
  • Pinch of salt
  • 1/2 tbsp vanilla powder
  • 1 tbsp oil and more for frying
  • Optional: chocolate chips
  • Optional toppings: berries, nut butter, soy quark

Preparation

  1. Optionally, add chocolate chips to the mixture.

  2. In a food processor or baking bowl, blend the oats until they form a flour.

  3. Add the remaining ingredients and mix until smooth.

  4. Heat a frying pan and add oil.

  5. Fry each pancake until golden brown on both sides.

  6. Serve with toppings like berries, nut butter, and soy quark, then enjoy.
