Lemoncurd Baked Oatmeal: a Dessert-Inspired Breakfast Delight
Ingredients
- 60g rolled oats
- 30g vanilla protein powder
- 1 banana
- 1 tbsp chia seeds
- 1/4 tsp cardamom
- 1/4 tsp cinnamon
- 1/2 tsp vanilla powder
- A pinch of salt
- 2/3 tsp baking powder
- 2 tbsp lemon juice or lemon curd
- Approximately 250ml oat milk/plant-based milk, or water
Preparation
In a mixer, combine all the ingredients and blend until smooth.
Preheat the oven to 210°C.
Grease 2 ramekins.
Pour the batter into the ramekins, filling them up to about 3/4 of the way. Reserve some of the oat mixture.
In a separate bowl, mix 3 tbsp vegan cream cheese with 2 tbsp lemon curd. Add a little water or another liquid to thin out the mixture.
Spoon the cream cheese and lemon curd mixture into the center of the filled ramekins.
Cover the cream cheese layer with the remaining oat mixture.
Bake in the preheated oven for approximately 20-25 minutes. The baking time may vary depending on your oven.
Once baked, add more cream cheese filling on top.
