Tiramisu Baked Oatmeal

Ingredients

  • 100g rolled oats
  • 1 tbsp chia seeds
  • 1/2 banana
  • 1 tbsp hazelnut butter
  • 2 tbsp date syrup
  • 120ml coffee (or oat milk)
  • 120ml oat milk
  • 1 tsp baking powder
  • Pinch of salt
  • 1/2 tbsp cacao powder
  • 1 tsp coconut oil

Topping

  • Vegan sour cream/Turkish yogurt mixed with cream cheese, stevia, vanilla (Optional: a few drops of lemon or coffee liquor)

Preparation

  1. In a bowl, combine rolled oats, chia seeds, mashed banana, hazelnut butter, date syrup, coffee (or oat milk), oat milk, baking powder, salt, cacao powder, and coconut oil.

  2. Mix everything together using a hand mixer or food processor until well combined.

  3. Grease 2 ramekins and pour the oatmeal mixture into them.

  4. Preheat the oven to 200°C (392°F).

  5. Bake the oatmeal in the preheated oven for about 16-18 minutes.

  6. While the oatmeal bakes, prepare the topping by mixing vegan sour cream/Turkish yogurt with cream cheese, stevia, and vanilla. Add a few drops of lemon or coffee liquor if desired.

  7. Once baked, remove the oatmeal from the oven and allow it to cool slightly.

  8. Top the oatmeal with the prepared frosting.
