Banana Oat Cookies with Cream Cheese Filling
Ingredients
- one mashed banana
- 1/2 cup rolled oats
- 1 tablespoon ground flax
- cinnamon
- 1/2 teaspoon almond extract
Filling
- vegan cream cheese
- blueberry jam
- a bit of maple syrup
Preparation
Preheat oven to 350°F.
Combine one mashed banana, 1/2 cup rolled oats, 1 tablespoon ground flax, cinnamon, and 1/2 teaspoon almond extract, then stir until evenly incorporated and form into 3 cookies on a parchment-lined baking tray.
Press the centers of the cookies to form indents.
Stir together vegan cream cheese, blueberry jam, and a bit of maple syrup, then spoon this into the indents of the cookies.
Bake for 8-9 minutes and allow them to cool so they can set up.
