Banana Oat Cookies with Cream Cheese Filling

Ingredients

  • one mashed banana
  • 1/2 cup rolled oats
  • 1 tablespoon ground flax
  • cinnamon
  • 1/2 teaspoon almond extract

Filling

  • vegan cream cheese
  • blueberry jam
  • a bit of maple syrup

Preparation

  1. Preheat oven to 350°F.

  2. Combine one mashed banana, 1/2 cup rolled oats, 1 tablespoon ground flax, cinnamon, and 1/2 teaspoon almond extract, then stir until evenly incorporated and form into 3 cookies on a parchment-lined baking tray.

  3. Press the centers of the cookies to form indents.

  4. Stir together vegan cream cheese, blueberry jam, and a bit of maple syrup, then spoon this into the indents of the cookies.

  5. Bake for 8-9 minutes and allow them to cool so they can set up.
