Easy Homemade Peanut Butter Cookies
Ingredients
- Wholemeal flour - 1 cup
- Peanut butter - 1 cup
- Coconut sugar - 1/2 cup
- Lemon essence - 1 tsp
- Pinch of salt
- Baking powder - 1 tsp
- Water - 1/4 cup
- Chocolate chips - 1/4 cup
Preparation
In a bowl, combine wholemeal flour, baking powder, salt, and sugar, and mix well.
Add peanut butter and lemon essence, and mix well into the dry ingredients.
The mixture will be crumbly and sticky; if the peanut butter is thick, warm it in the microwave for a few seconds to soften.
Add chocolate chips, then gradually add water and mix to form a soft dough.
Shape the dough as desired and bake in a preheated oven at 180°C for 8 to 10 minutes.
Remove from the oven; the cookies may look underdone but will firm up upon cooling. Let them cool for about 15 minutes before removing from the tray.
If the dough is not soft enough, add more water while mixing.
