Fast and Easy Vegan Lo Mein

Ingredients

  • 250g dry ramen noodles
  • 2 tbsp sesame oil
  • 3 fresh onions (separate the white part from the green one)
  • 2 garlic cloves
  • 2 tsp fresh ginger (minced)
  • 1 chili (minced)
  • 2 handfuls of fresh mushrooms
  • 1 red pepper
  • 1 yellow pepper
  • 3-4 carrots
  • 1 broccoli

Sauce

  • 1/2 cup soy sauce (mild)
  • 1 tsp sugar
  • 1 tbsp sesame oil

Toppings

  • 1 tbsp sesame seeds

Preparation

  1. Cook the noodles as described on the package, dry them and set aside.

  2. Combine all the ingredients of the sauce in a jar and set aside.

  3. Chop the vegetables into tiny slices and set aside.

  4. Heat a wok over high heat, add the oil, ginger, white part of the onions, chili and saute for 1-2 minutes.

  5. Add the vegetables and cook for 5 minutes, then stir in the noodles and sauce and cook for another 3-4 minutes, ensuring vegetables remain crunchy.

  6. Top with the green part of the onions and sesame seeds.

  7. Enjoy
