Fresh Arugula Pesto with Walnuts and Cheese

Ingredients

  • 2 packed cups fresh arugula
  • 1/4 cup walnuts
  • 1/4 cup Pecorino grated cheese
  • 2 garlic cloves
  • 1 tbsp lemon juice
  • 1/4 cup avocado oil

Preparation

  1. Add all of the ingredients, except the oil, to a food processor and pulse 5-10 times until the mixture has formed a paste.

  2. Slowly add the avocado oil while pulsing until the ingredients are smoothly blended into the pesto.

  3. Enjoy on risotto, pasta, salad, veggies, or paninis.

  4. You can freeze any leftovers.
