Fresh Arugula Pesto with Walnuts and Cheese
Ingredients
- 2 packed cups fresh arugula
- 1/4 cup walnuts
- 1/4 cup Pecorino grated cheese
- 2 garlic cloves
- 1 tbsp lemon juice
- 1/4 cup avocado oil
Preparation
Add all of the ingredients, except the oil, to a food processor and pulse 5-10 times until the mixture has formed a paste.
Slowly add the avocado oil while pulsing until the ingredients are smoothly blended into the pesto.
Enjoy on risotto, pasta, salad, veggies, or paninis.
You can freeze any leftovers.
