Gluten-Free Vegan ANZAC Inspired Biscuits

Ingredients

  • 100g Nuttelex (or other vegan margarine)
  • 1 tsp bi-carb soda
  • 2 tblsp boiling water
  • 1 tblsp golden syrup
  • 100g gluten free flour (my fave is @woolworths_au Free From)
  • 100g coconut sugar
  • 1 cup quinoa flakes
  • 85g hemp seeds (use coconut here if you like!)

Preparation

  1. Melt the margarine, water, and golden syrup together. Dissolve the bi-carb soda into this and set aside.

  2. In a large bowl, mix together the remaining dry ingredients. Pour the wet over the dry mix and combine.

  3. Scoop equal sized balls (I made 14) onto a lined baking tray, and bake in a pre-heated 180°C oven for 20 minutes.
