Vegan Gluten-Free ANZAC Biscuits with Coconut Sugar
Ingredients
Dry mix
- 1 cup gluten-free oats
- 1/2 cup self-raising gluten-free flour
- 1/2 cup plain gluten-free flour
- 3/4 cup shredded coconut
- 1/2 cup coconut sugar
Wet mix
- 1/2 tsp bicarbonate soda
- 2 tbsp water
- 125g vegan butter
- 2 tbsp golden syrup or maple syrup
Preparation
Mix dry ingredients together well.
In a separate bowl, mix bicarbonate soda and water, then add butter and syrup. Stir to combine well.
Mix dry and wet ingredients together well, then place the cookies on a baking tray.
Bake at 160°C (320°F) for 15 minutes. For softer cookies, leave slightly undercooked. Enjoy fresh or keep in an airtight container.
