Vegan Gluten-Free ANZAC Biscuits with Coconut Sugar

Ingredients

Dry mix

  • 1 cup gluten-free oats
  • 1/2 cup self-raising gluten-free flour
  • 1/2 cup plain gluten-free flour
  • 3/4 cup shredded coconut
  • 1/2 cup coconut sugar

Wet mix

  • 1/2 tsp bicarbonate soda
  • 2 tbsp water
  • 125g vegan butter
  • 2 tbsp golden syrup or maple syrup

Preparation

  1. Mix dry ingredients together well.

  2. In a separate bowl, mix bicarbonate soda and water, then add butter and syrup. Stir to combine well.

  3. Mix dry and wet ingredients together well, then place the cookies on a baking tray.

  4. Bake at 160°C (320°F) for 15 minutes. For softer cookies, leave slightly undercooked. Enjoy fresh or keep in an airtight container.
