Golden Coconut Oats with Turmeric and Spices

Ingredients

  • 1/2 C full fat coconut milk, plus more for topping
  • 1/2 C water
  • 1/3 C @bobsredmill GF rolled oats
  • 1 tsp @manitobaharvest hemp seeds
  • 1 tsp @navitasorganics flax seeds
  • 1 TBSP @wholesomesweet coconut sugar
  • 1 TBSP unsweetened shredded coconut
  • 1/2 tsp turmeric
  • 1/2 tsp ginger
  • 1/2 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/2 tsp lemon zest
  • pinch of salt

Toppings

  • @purely_elizabeth GF granola
  • unsweetened coconut flakes
  • toasted pecans
  • sliced strawbs

Preparation

  1. Bring coconut milk and water to a boil in a small saucepan. Add in all other ingredients and reduce heat. Simmer for 10-12 minutes.

  2. Transfer to bowl and stir in some extra coconut milk - use the cream from the top of the can for this part. Top with remaining toppings.
