Healthy Vegan Gluten-Free Breakfast Cookie

Ingredients

  • 2 mashed bananas
  • 1.5-2 cups gluten-free oats
  • 1/2 cup runny homemade peanut butter or other nut or seed butter
  • ground flax
  • poppyseeds
  • goji berries
  • dried cherries
  • raw coconut flakes
  • hemp seeds
  • chunky salt

Preparation

  1. Mash 2 bananas.

  2. Mix the mashed bananas with 1.5-2 cups gluten-free oats and 1/2 cup runny peanut butter or other nut or seed butter.

  3. Add desired add-ins such as ground flax, poppyseeds, goji berries, dried cherries, raw coconut flakes, hemp seeds, and chunky salt.

  4. Adjust oats amount based on add-ins; use up to 2 cups if fewer dry ingredients are added.

  5. Bake at 375°F for 16 minutes.

  6. If not using ground flax or extra dry ingredients, bake for an additional 1-2 minutes if needed.
