Healthy Vegan Gluten-Free Breakfast Cookie
Ingredients
- 2 mashed bananas
- 1.5-2 cups gluten-free oats
- 1/2 cup runny homemade peanut butter or other nut or seed butter
- ground flax
- poppyseeds
- goji berries
- dried cherries
- raw coconut flakes
- hemp seeds
- chunky salt
Preparation
Mash 2 bananas.
Mix the mashed bananas with 1.5-2 cups gluten-free oats and 1/2 cup runny peanut butter or other nut or seed butter.
Add desired add-ins such as ground flax, poppyseeds, goji berries, dried cherries, raw coconut flakes, hemp seeds, and chunky salt.
Adjust oats amount based on add-ins; use up to 2 cups if fewer dry ingredients are added.
Bake at 375°F for 16 minutes.
If not using ground flax or extra dry ingredients, bake for an additional 1-2 minutes if needed.
