Indian Mixed Vegetable Stir-Fry
Ingredients
- 1 small potato, thinly sliced
- 2 medium carrots, sliced
- 1 cup mushrooms, finely chopped
- 1 onion, thinly sliced
- 4-5 garlic cloves, chopped
- 1 medium bell pepper, thinly sliced
- 1/4 cup frozen corn
- 1/4 cup frozen peas
- 1 green chili, chopped
- 1 medium tomato, sliced
- 1 tablespoon oil
- 1/2 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- asafoetida
- salt
- 2 tablespoons chopped coriander leaves
- amchur powder
Preparation
Heat oil in a kadhai, add cumin seeds and green chili once it splutters, then add onion and garlic and sauté for a minute.
Add all vegetables except tomato and sauté for 2-3 minutes.
Add all spices and mix well, cover and cook for 7-8 minutes.
Add tomatoes, cover and cook for another 5 minutes on low to medium flame.
Sprinkle amchur powder, garnish with fresh coriander leaves, and serve hot.
Notes
You can add any vegetables of your choice or availability.
