Indian Mixed Vegetable Stir-Fry

Ingredients

  • 1 small potato, thinly sliced
  • 2 medium carrots, sliced
  • 1 cup mushrooms, finely chopped
  • 1 onion, thinly sliced
  • 4-5 garlic cloves, chopped
  • 1 medium bell pepper, thinly sliced
  • 1/4 cup frozen corn
  • 1/4 cup frozen peas
  • 1 green chili, chopped
  • 1 medium tomato, sliced
  • 1 tablespoon oil
  • 1/2 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • asafoetida
  • salt
  • 2 tablespoons chopped coriander leaves
  • amchur powder

Preparation

  1. Heat oil in a kadhai, add cumin seeds and green chili once it splutters, then add onion and garlic and sauté for a minute.

  2. Add all vegetables except tomato and sauté for 2-3 minutes.

  3. Add all spices and mix well, cover and cook for 7-8 minutes.

  4. Add tomatoes, cover and cook for another 5 minutes on low to medium flame.

  5. Sprinkle amchur powder, garnish with fresh coriander leaves, and serve hot.

Notes

  1. You can add any vegetables of your choice or availability.
