Jaggery Peanut Brittle
Ingredients
- Peanuts - 2 cups ( without skin )
- Pumpkin seeds - 1/2 cup
- Jaggery - 1 1/2 cup ( grated or crumbled into small pieces )
- Water - 2tbsp
- Coconut oil
Preparation
In a thick bottomed pan dry roast 2 cups peanuts and pumpkin seeds on low flame
While rosting keep stirring it continuously so that they don't burn and get roasted evenly
Once roasted well transfer on a plate and keep aside
In the same thick bottomed pan add 1 1/2 cup of Jaggery, add in 2tbsp of water and stir until the Jaggery melts
Make sure your flame is on low
Keep stirring it until Jaggery melts and it turns into glossy and thickens
Check the consistency before you add in your peanuts
TO CHECK ■ Drop a syrup into the bowl of water , it should form like a hard ball and break with a snap sound
If it doesnt then keep stirring it again and do the drop test again to get the right consistency
Turn off the flame and add your roasted peanuts
Mix well until peanuts gets coated in the syrup
Pour the mixture over to tray lined with parchment paper. Spread and pat with the help of the back of your spoon to smoothen the top
You have to be quick doing this process as it starts forming its shape
You can use rolling pin aswell
Allow to cool for a minute, and cut into pieces when it's still warm otherwise you may not get perfect square shapes . ✒ Cool it for about an hour, cut into Small pieces and store it in a airtight container and serve for a month and enjoy
