Chocolate chip banana bread bars

Ingredients

  • 1.5 cup (350 ml) quick or rolled oats (gluten free if you want)
  • 3 medium sized ripe bananas
  • 4 tbsp coconut oil
  • 2 tsp baking powder
  • 4 tbsp pumpkin seeds
  • 4 tbsp chocolate chips

Preparation

  1. Preheat your oven to 350 F / 180 C.

  2. Mix oats, bananas, coconut oil and baking powder in a food processor for about a minute until combined.

  3. Take out the food processor blade and stir in half the pumpkin seeds and chocolate chips.

  4. Line a baking tray with parchment paper. Using a spatula, spread out the batter to a rectangle ca 18 x 22 cm. Sprinkle the rest of the pumpkin seeds and chocolate chips and gently press them into the batter. Using a knife, score the batter into 8 bars.

  5. Bake for 23-24 minutes until the edges are golden brown.
