Vegan Banana Bread with Nutmeg and Cinnamon

Ingredients

  • 1.5 cups rice flour (can substitute with normal or wholemeal flour)
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg powder
  • pinch of salt
  • 2 ripe bananas
  • 1/2 cup vegetable milk
  • 1 shot espresso
  • 2 tablespoons coconut oil

Preparation

  1. Blend all ingredients together and pour into a small mold.

  2. Bake for 30 minutes at 190°C.

  3. Optionally, slice a few strawberries and top them on the bread for a final touch.
