Jalapeno Avocado Pancakes

Ingredients

Batter

  • 1 tbsp flax meal
  • 2 tbsp water
  • 1 banana
  • 3/4 c almond milk
  • 1/4 c polenta
  • 1 tsp salt
  • 1/2 c spelt flour
  • 2 tsp baking powder
  • coconut oil to cover pan

Topping

  • 1 jalapeño sliced
  • 1/2 avocado
  • syrup

Preparation

  1. Make a flax egg by mixing 1 tbsp flax meal with 2 tbsp water and let it sit for 5 minutes to gel

  2. Mash the banana in a bowl

  3. Mix the mashed banana with 3/4 cup almond milk

  4. In a separate bowl, combine 1/4 cup polenta, 1 tsp salt, 1/2 cup spelt flour, and 2 tsp baking powder

  5. Add the flax egg to the banana mixture, then combine with the dry ingredients to form the batter

  6. Heat a pan over medium heat and add coconut oil to cover the pan

  7. Pour batter onto the pan and cook until bubbles form, then flip and cook until golden brown

  8. Serve the pancakes topped with sliced jalapeño, avocado, and syrup
