Loaded Cinnamon Sweet Potato Oatmeal
Ingredients
- 1/2 cup gluten free oats
- 1 tbsp chia seeds
- 1/4 cup steamed then frozen zucchini
- 1 cup cashew milk
- 1 pinch of salt
Toppings
- Banana
- Blueberry
- Almond butter
- Mashed sweet potato
- Cinnamon
- Cacao nibs
- Maple syrup
Preparation
Steam and freeze zucchini in advance, and cut it up after it softens if needed.
Combine oats, chia seeds, zucchini, cashew milk, and salt; soak overnight.
In the morning, heat the mixture or eat it cold.
Add desired toppings such as banana, blueberry, almond butter, mashed sweet potato, cinnamon, cacao nibs, or maple syrup.
