Loaded Veggie Chili Fries

Ingredients

  • 1/2 bag of frozen fries
  • 1 can of vegetarian chili
  • 1 cup shredded cheddar
  • 1/2 cup cherry tomatoes diced
  • 1/2 cup diced green onions
  • 1 avocado
  • 1 jalapeno sliced
  • Chopped cilantro for garnish

Preparation

  1. Preheat oven to 425

  2. Spread fries on a large baking sheet with parchment paper and bake as per package instructions

  3. Add chili to a small saucepan and let simmer for 5 minutes until heated through

  4. Chop veggies and shred cheese

  5. Top fries with chili and cheese, then place back into the oven for 5 more minutes until cheese has melted

  6. Top chili fries with tomatoes, green onion, avocado, jalapenos, and cilantro

  7. Enjoy immediately
