Nutritious Chocolate Goodness Cake
Ingredients
Wet
- 1 3/4 cups cooked beetroot, roughly chopped
- 1 can black beans, drained and rinsed
- 1/4 cup olive oil
- 1/2 cup maple syrup
- 2 teaspoons vanilla extract
- 1/4 cup oat milk
Dry
- 3/4 cup cacao powder
- 1 cup plain flour
- 1 tsp salt
- 1 tsp bicarbonate of soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/3 cup chocolate chips of your choice, plus extra for the top
- Sprinkling of sea salt
Preparation
Preheat the oven to 180C. Line and grease a round cake tin.
Place a sieve over a large bowl and sieve in all the dry ingredients, except for the chocolate chips. Set aside.
Put all the wet ingredients in a blender and blend until smooth. Pour into the bowl with the dry ingredients and mix until just combined.
Fold in the chocolate chips, saving a few to sprinkle on the top.
Pour the batter into the prepared cake tin. Sprinkle with the extra chocolate chips and sea salt.
Bake for 30 minutes. Allow it to cool before turning out.
