Pomegranate Buckwheat Groats Salad

Ingredients

  • 1/2 cup cooked buckwheat groats
  • Plateful of mixed greens or lettuce of choice
  • Handful chopped fennel
  • Handful chopped red cabbage
  • Handful chopped cherry tomatoes
  • Handful chopped cucumbers
  • Handful chopped cilantro
  • 1/4 avocado sliced or 1 tablespoon pumpkin seeds
  • Handful pomegranate seeds

Dressing

  • Balsamic vinegar
  • Olive oil
  • Salt
  • Pepper

Preparation

  1. Chop the fennel, red cabbage, cherry tomatoes, cucumbers, and cilantro

  2. Slice the avocado or measure the pumpkin seeds

  3. Combine all salad ingredients in a large bowl

  4. Prepare the dressing by mixing balsamic vinegar, olive oil, salt, and pepper in a small bowl

  5. Drizzle the dressing over the salad and toss gently to coat
