Pomegranate Buckwheat Groats Salad
Ingredients
- 1/2 cup cooked buckwheat groats
- Plateful of mixed greens or lettuce of choice
- Handful chopped fennel
- Handful chopped red cabbage
- Handful chopped cherry tomatoes
- Handful chopped cucumbers
- Handful chopped cilantro
- 1/4 avocado sliced or 1 tablespoon pumpkin seeds
- Handful pomegranate seeds
Dressing
- Balsamic vinegar
- Olive oil
- Salt
- Pepper
Preparation
Chop the fennel, red cabbage, cherry tomatoes, cucumbers, and cilantro
Slice the avocado or measure the pumpkin seeds
Combine all salad ingredients in a large bowl
Prepare the dressing by mixing balsamic vinegar, olive oil, salt, and pepper in a small bowl
Drizzle the dressing over the salad and toss gently to coat
