Salmon and Broccoli Macaroni Frittata

Ingredients

  • 50g curly macaroni
  • Broccoli
  • 3 laughing cow lightest cheese triangles
  • 20g grated mozzarella
  • Vivera plant salmon fillet
  • 3 eggs
  • A little lurpak butter
  • A little olive oil

Seasonings

  • Garlic powder
  • Onion salt
  • Half an oxo meat free chicken flavour stock cube
  • White pepper
  • Chilli flakes
  • Ground black pepper

Preparation

  1. Cook the macaroni until tender and swollen, leaving a little pasta water in the pan.

  2. Cut the broccoli into small pieces.

  3. Fry the broken-up plant salmon fillet in a little butter and olive oil.

  4. Beat 3 eggs.

  5. Combine all ingredients in an omelette pan.

  6. Slowly fry the mixture with a lid on over low heat, sprinkling with chilli flakes and ground black pepper.

  7. Flip the frittata and cook for an additional few minutes.

  8. Fry in total for about 16 minutes until done.
