Hearty Vegetable Soup with Cheesy Garlic Bread

Ingredients

  • Brown onions
  • Chantenay carrots
  • Boiling water
  • Knorr vegetable stock pot
  • Massel chicken style stock powder
  • Tarragon
  • Garlic powder
  • Onion salt
  • Black pepper
  • White pepper
  • Chilli flakes
  • No Meat Company no chick strips
  • Salad potatoes
  • Orzo pasta
  • Fresh chives

Garlic bread

  • Wholemeal bun
  • 40g grated mozzarella
  • Garlic powder
  • Chives

Preparation

  1. Dice the brown onions and fry them off.

  2. Top and tail the Chantenay carrots, halve them, and add to the pan.

  3. Add water or stock, tarragon, garlic powder, onion salt, black and white pepper, and chilli flakes, then cook for 10 minutes.

  4. Add defrosted and shredded no chick strips and peeled, sliced salad potatoes, then cook for a further 15 minutes.

  5. Add orzo pasta and cook for another 10 minutes until done.

  6. Garnish with fresh chives and chilli flakes.

Garlic bread

  1. Slice the wholemeal bun in half.

  2. Top with grated mozzarella, sprinkle with garlic powder and chives.

  3. Grill for a couple of minutes until the cheese is melted and bubbly.
