Vegetarian Tagliatelle Bolognese with Spinach and Cheese
Ingredients
- Large brown onion
- Oil (2 units)
- 8 cherry tomatoes
- Morrisons meat-free mince (amount similar to onion)
- Water (to just cover contents)
- 1/2 tube of tomato puree
- Knorr vegetable stock pot
- 1 teaspoon Very Lazy Food UK chipotle paste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion salt
- 1/2 teaspoon sea salt
- Tagliatelle
- Spinach
- 40g Pilgrims Choice extra mature cheddar
- Fresh ground black pepper
- Chilli flakes
- Chives
Preparation
Finely dice the onion and fry in oil until soft.
Cook the cherry tomatoes with the onions until they break down.
Add the meat-free mince to the pan and cook.
Add water to just cover the contents of the pan.
Stir in 1/2 tube of tomato puree, Knorr vegetable stock pot, 1 teaspoon chipotle paste, 1/2 teaspoon garlic powder, 1/2 teaspoon onion salt, and 1/2 teaspoon sea salt.
Cook the tagliatelle according to package instructions, then stir a little of the bolognese sauce through it to coat and prevent it from drying out.
Add spinach to the dish.
Top with 40g extra mature cheddar, fresh ground black pepper, chilli flakes, and chives.
Note that the entire dish is approximately 2 syns and hex A (free if using 1 cal spray, per Slimming World guidelines).
