Pasta Frittata with Cheese and Vegetables

Ingredients

  • 150g Trottole pasta
  • 9 Laughing Cow extra light cheese triangles
  • Spinach
  • Baby peppers
  • Naked Glory roast readybites
  • Knorr vegetable stock pot
  • Tarragon
  • White pepper
  • Garlic powder
  • Chilli flakes
  • 6 eggs

Preparation

  1. Cook pasta for 6 minutes

  2. Drain off most of the water

  3. Mix cheese triangles through the pasta to make a creamy sauce

  4. Add spinach, baby peppers, roast readybites, vegetable stock pot, tarragon, white pepper, garlic powder, and chilli flakes, then mix through

  5. Beat the eggs and mix them through the pasta mixture

  6. Bake in a silicone loaf mould at 200°C for 25 minutes

  7. Top with 60g grated mozzarella

  8. Bake for a further 12 minutes until golden

  9. Allow to cool then slice

Tips

  1. They are also delicious fried and served with chips and or salad
